I love a good food truck. Who, in their right mind, doesn’t? In the past five years, food trucks in New York have started giving restaurants with permanent homes a run for their money. If you walk down Hudson around lunchtime on any given day during the work week, you’ll find that the street is littered with trucks selling crepes, soup, Korean, Japanese, barbecue, tacos, grilled cheese – it’s almost like a traveling food court! Even José Andrés has his Pepe, a food truck in Washington, DC.
Today’s image comes courtesy of a friend who somehow, magically, fantastically, discovered that The Mexican Paradise is roaming the open roads of Pennsylvania.
More importantly – since when are cheeseburgers an integral part of Mexican cuisine?! If only they were open, I would love to know. I wonder if they serve frozen margaritas. Those are an integral part of my Mexican paradise.
